Yiouvetsi me Arni (Orzo with Lamb)

| ~ Ingredients: ~ 1 kilo of Lamb cut in small pieces ~ 2 cups of kritharaki (orzo) ~ 4-5 cups of hot meat broth ~ 1 cup of diced ripped tomatoes ~ 1 cup of grated cheese of choice ~ 1 medium size onion finely chopped ~ 2 tbsp of tomato paste ~ 1/4 cup of olive oil ~ 4-5 cloves ~ 1 stick of cinnamon ~ Salt and pepper to taste |

| ~ Heat the oil in a pan and fry the onion until translucent. ~ Add the meat and fry all over until light brown. ~ Dissolve the tomato paste in a cup of hot broth and add it to the pan. ~ Add the chopped tomatoes salt, pepper, cloves, cinnamon and the rest of the broth. ~ Cover the pan and simmer for about 1 hour or until the meat is cooked. ~ Add the Kritharaki (Orzo) and cook for about 20-30 minutes on low heat or until all the sauce is absorbed. ~ Stir occasionally to mix the meat with the orzo and sauce and prevent it from sticking to the bottom of the pan. ~ Yiouvetsi is traditionally cooked in a clay pot and in the oven on low heat. ~ Place the cooked Yiouvetsi in a platter, sprinkle with plenty of grated cheese and serve. ~ You can accompany Yiouvetsi with Plain Yogurt. ~ Good luck and bon appétit. |
