Yiouvarlakia Cyprus Version (Avgolemono with Meatballs)
~ Yiouvarlakia is Avgolemono soup with meatballs.
~ The soup is prepared and made exactly to the
Avgolemono recipe.
~ Ingredients:
~ 8 cups of chicken broth
~ 1 cup of rice
~ 1/2 a cup of lemon juice
~ 6 eggs yolks
~ Salt and pepper to taste |

~ Ingredients for the meatballs:
~ 1/2 a kilo of minced meat
~ 1/2 a cup of rice
~ 1/2 a cup of flour
~ 1 egg
~ 1 small onion finely chopped
~ 1/4 cup of finely chopped parsley
~ 1 clove of garlic finely chopped
~ Salt and pepper to taste |

~ For the chicken broth you can use the ready bought one from the store or you can make it your self by boiling some chicken or parts of it and serve it with the soup.
~ The home made broth is always more nutritious and the soup tastes better.
~ While the chicken is being cooked, the meatballs should be prepared.
~ Place the minced meat into a bowl with the rest of the ingredients and knead well for all the ingredients to mix well.
~ After kneading and mixing all the ingredients, make your mixture in small balls.
~ You can make the meatballs as small or as big as you prefer.
~ When the chicken is cooked, remove it from the pot and strain the broth.
~ Place the chicken broth in a pot to cook the rice and the meatballs.
~ Add as much water as needed (if needed) for the amount of rice you will use.
~ Bring the broth to boil, add salt if needed and add the rice and meatballs to cook.
~ Remove the pan from the heat; (when rice is cooked) beat the egg yolks with the lemon juice and with a deep serving soup spoon gradually add broth into it without stopping beating the mixture.
~ After adding 2-3 spoonfuls of broth into your mixture pour it back into the rest of the broth.
~ When pouring it back into the broth you keep stirring the broth this time so it can be mixed well.
~ Add salt and pepper to taste and serve hot.
~ When serving Yiouvarlakia place in each plate served 4-5 meatballs.
