Xtapothi Krasato (Octopus in Wine Sauce)

~ Ingredients:

~ 3lb fresh octopus
~ 1/2 a cup of olive oil
~ 3-4 garlic cloves finely chopped
~ 1-2 onions finely chopped
~ 1/2 a cup of red dry wine
~ 4-5 tomatoes, peeled and diced
~ 10 pepper corns
~ Salt and pepper to taste

~ Clean, wash thoroughly and cut the octopus in big pieces.
~ Place in a pot with a pinch of salt with only 1 inch of water.
~ Cover to pot and simmer for about 10 minutes until the octopus turns bright pink-red and feels tender.
~ Drain the octopus, cut into small pieces and return to the pot after is being washed.
~ Add the olive oil, garlic and onions, pepper corns and place over high heat and sauté for a few minutes stirring occasionally.
~ Add the wine and cook over a high heat until it has almost evaporated.
~ Add the tomatoes and salt and pepper to taste and stir to mix all ingredients.
~ Reduce the heat to low, cover the pot and cook for about 1 1/2 hours or until the octopus is tender and the sauce is thick.
~ Serve hot as an appetizer or over pasta or a bed of rise.
~ The only thing you need with it is some garlic bread and a glass of fine wine.
