Vothino Stifatho (Beef Casserole with Onions)

| ~ Ingredients: ~ 1 kg of beef shoulder cut in small cubes ~ 1 kg of small onions,(pickling size), peeled and kept whole ~ 1/2 kg of ripped tomatoes (cut in half) ~ 4-5 garlic cloves (chopped) ~ 1 cup of hot water ~ 3-4 tbl spoons of wine vinegar ~ 1 small glass of red dry wine ~ 1/2 cup of olive oil ~ 10-12 black pepper corns ~ 2-3 bay leaves ~ 1-2 small cinnamon sticks ~ Salt and pepper to taste |

| ~ Heat the olive oil in a large casserole sauté the small onions until golden brown. ~ Remove the onions from the casserole in a patter and fry the garlic until is tender. ~ Add the beef cubes and fry lightly. ~ Add the wine vinegar, the wine and after it boils add the rest of the ingredients. ~ Stir and cook the beef with the casserole covered on low heat for about 1 1/2 hours or when beef is tender. ~ At this point add the small onions stir so the onions, beef and the rest of the ingredients mix together and let cook for about another 30 minutes on low heat. ~ Do not stir again your Stifatho for the next 30 minutes but occasionally rotate or shake your casserole to coat the meat and onions with the sauce. ~ Serve Stifatho hot with any side dish you wish. ~ Good luck and bon appétit. ~ Serves 4-6 persons. |
