Tyropita Soufflé (Cheese Soufflé)

 ~ Ingredients:
 
~ 300g of feta cheese (crushed)
~ 250g of strained yogurt
~ 250g of soft salted butter
~ 1 cup of grated cheese of choice
~ 1 cup of flour
~ 1 cup of cold water
~ 4 eggs, (separate yolks from whites)
~ Bread crumbs
~ Pepper to taste
~ Salt if needed
   

 


~ First you beat the egg whites until they become foamy and thick.
~ In a large bowl, add all the ingredients, egg yolks, cheeses, butter, yogurt, water, flour, some pepper and salt if needed.
~ After mixing all ingredients well, add the egg whites and mix well again.
~ In the meantime we prepare the cooking dish (preferably Pyrex).
~ Butter your dish and sprinkle with bread crumbs.
~ Pour your mixture in the cooking dish, spread to go all over and sprinkle over again with bread crumbs.
~ Preheat your oven to 200 degrees Celsius (See conversions for Fahrenheit) and cook until golden brown (about 45 minutes to an hour).
~ Serve hot.
