Tyropita me Diosmo (Cheese Pie with Mint)

~ Ingredients

~ 1 Pack of fillo
~ 250g of ricotta cheese
~ 250g of feta cheese
~ 1 cup of grated Kefalograviera cheese
~ 3 eggs
~ 1 cup of finely chopped fresh mint
~ Olive oil for brushing the fillo
~ Ground pepper to taste 
Cheese Pie
   

 

~ Place the fetta cheese in a bowl and with your fingers or a fork crumble it to small pieces.
~ Add the ricotta cheese and mix well.
~ Sprinkle it with the grated kefalograviera cheese and mix well all three cheeses.
~ Add the eggs and work it well so it mixes all cheeses with the eggs.
~ Add the finely chopped mint and pepper to taste and mix again.
~ Place the cheese mixture in the fridge to cool down a bit until you are ready to use it.
~ With a kitchen brush, using olive oil, brush your baking pan.
~ Place 4 fillo sheets in the bottom of the pan, brushing each one on both sites with oil.
~ Pour your cheese mixture in the pan and with a fork spread it to go everywhere in the pan evenly.
~ Fold over the cheese mixture the left over bottom 4 fillo sheets from the sides of the pan.
~ Place 4 more fillo sheets over the top of the cheese mixture, brushing with oil each one.
~ With a knife cut any excess fillo hanging over the edges of the pan.
~ With a sharp knife cut the top fillo in serving pieces.
~ Place the Tyropita me Diosmo (Cheese Pie with Mint) in a preheated oven to 180 degrees Celsius (See Conversions for Fahrenheit).
~ Bake until the fillo gets a golden brown color.
~ When is done, cut it in serving pieces, serve it to the table and enjoy it while is hot.
~ Tyropita me Diosmo (Cheese Pie with Mint) can also be eaten cold.
