(Greek Sweet Bread)

~ Tsoureki is a kind of bread that is made only at Greek Orthodox Easter.
~ People other than Greeks; know it as Easter Bread or Greek Sweet Bread.
~ It is delicious and very nutritious.
~ It is as the word say’s “Sweet”.

~ NOTE: The ingredients listed below are for one Tsoureki about 1/2 kilo in weight.
~ The more Tsourekia you want to make, you add as many doses of Ingredients.
 

 

  • ~ Ingredients:

  • ~ 5 cups of flour
  • ~ 1 cup of warm milk
  • ~ 1 cup of sugar
  • ~ 3 eggs lightly beaten
  • ~ 1/2 a cup of unsalted melted butter
  • ~ 2 tsp of dry yeast
  • ~ 1/2 tsp of salt
  • ~ 1tbsp of orange juice
  • ~ 1 tsp of grated orange skin
  • ~ 1/2 tsp of powdered mahlepi
  • ~ 1/2 tsp of powdered mastic

  • ~ For glazing:

  • ~ 1 egg yolk lightly beaten
  • ~ 1 hard boiled coloured egg (optional)
 
   

 

~ Use half of the warm milk and dissolve the yeast.
~ In a bowl or a blender beat the sugar, eggs, melted butter, orange juice, maclepi, mastic, milk with the dissolved yeast, the rest of the milk and the orange rind to mix well.
~ In another bowl mix your flour with the salt.
~ Start adding slowly your flour mixture (beating at the same time) until it becomes a thick dough.
~ Transfer your dough in a larger size bowl (about double the size of the dough) and knead again until is smooth and elastic.
~ Cover with wax or parchment paper and on top with a blanket or a thick towel.
~ Place your covered dough in a warm place and let it rise for about 3-4 hours.
~ It will rise to about double it’s size.
~ Knead the dough again and cut in two equal pieces.
~ Roll your dough into thick tubs about 12 inches long.
~ Join and press the two ends of the tubs, braid your dough and press the other ends together.
~ Place your Tsoureki in a non stick or greased pan and cover again with the blanket and let it rise again for about an hour or until it double in size.
~ Glaze the Tsoureki with the beaten egg yolk and place in the middle the coloured egg.
~ Bake your Tsoureki in a preheated oven at 350 degrees for about 30- 45 minutes or until golden brown.

~ NOTE: If you are baking more than one Tsoureki on the same pan, keep them far apart from each other because they are going to join.
