Soupa Tomatas (Tomato Soup)

| ~ Ingredients: ~ 1/2 a kilo of fresh ripped tomatoes grated ~ 2 tablespoon of olive oil ~ 1 onion finely chopped ~ 1 carrot finely chopped ~ 1 celery leaf finely chopped ~ 1-2 cloves of garlic finely chopped (optional) ~ 1 teaspoon of corn flour (Optional) ~ Chicken broth or 1 cube of broth ~ 1 tsp of sugar ~ Salt and pepper to taste |

| ~ Wash well and grate the tomatoes. ~ Wash well and chop all the vegetables. ~ Heat up the olive oil in a large enough pot. ~ Add the chopped onions and garlic (optional) and sauté until they are translucent. ~ Add the corn flour dissolved the in some water (optional). ~ Add the grated tomatoes, about 3 cups of chicken broth, or 1 cube of broth, 2 cups of water, finely chopped carrots and celery. ~ Add the sugar, salt and pepper to taste. ~ Cook for about 20 minutes or until the carrots and celery leaves are cooked. ~ Remove from the heat and serve hot with some fresh bread or bread sticks. ~ Good luck and enjoy. ~ Note: ~ If you are using homemade chicken broth, use 3 cups of broth and 2 cups of water. ~ If you are using chicken broth cube, use 5 cups of water. ~ Depending on how thick you want your soup to be, you can add or skip the corn flour. ~ Add some finely chopped garlic if you prefer your soup to be a little spicy. |
