| ~ Ingredients: ~ 500 grams of mature ripped tomatoes ~ 2 big onions finely chopped ~ 2 small brunches of spearmint finely chopped ~ Salt and pepper to taste ~ A pinch of powder cinnamon ~ Flour ~ Oil for frying |

| ~ Wash the tomatoes well, fine chop them and place them in a bowl. ~ Add the chopped onions, chopped spearmint, and salt and pepper to taste. ~ Knead well to mix all ingredients. ~ Add as much flour as it needs in order to have a very soft pulp. ~ If it is preferred you can add some crumbled Feta cheese or any other grated cheese to make the croquettes tastier. ~ Pour enough oil in a frying pan to heat up. ~ Take 1 tbsp of the mixture at a time and put it in the hot oil and fry it from all sides until they are golden brown. ~ Once they are cooked, place them on kitchen paper towel to remove any excess oil. ~ This recipe is a specialty of the Kiklathes Islands (Cyclades) where in some islands are using sun-dried tomatoes instead of fresh. ~ Tomatokeftethes Kiklathon (Tomato Croquettes) are the perfect Mezes (Appetizer) for a shot of Ouzo. ~ They are also served during fasting days without cheese. ~ Good luck and enjoy. |

~ Wash the tomatoes well, fine chop them and place them in a bowl. ~ Place them in a strainer to strain any excess water. ~ Clean and grate the onion and place it in the bowl with the chopped tomatoes. ~ Add the oregano, parsley and salt and pepper to taste and mix well all the ingredients. ~ Add the flour a little bit at a time and mixing continuously until the mixture becomes a thick batter. ~ Pour enough oil in a frying pan to heat up. ~ Take 1 tbsp of the mixture at a time and put it in the hot oil and fry it from all sides until they are golden brown. ~ Once they are cooked, place them on kitchen paper towel to remove any excess oil. ~ Tomatokeftethes (Tomato Croquettes) are served hot. ~ Good luck and enjoy. |
