Thaktila (Lady’s Fingers)

Thaktila is a strictly Cypriot dessert that whoever tried it went back for more.
~
Thaktila recipe has being in every Cypriot house preserved for generations and past on from mother to daughter.
~ You can have it in your list of favorite
desserts for making it for your friends and family.
~ Dough ingredients:
~ 3 cups of flour
~ 1 cup of water
~ 1 tbsp of salt
~ 1/2 a cup of corn oil
~ 2 egg yolks

~ Syrup ingredients:
~ 1 cup of sugar
~ 2 cups of water
~ 1/2 a cup of honey
~ 1 tbsp of lemon juice
~ 1 small cinnamon stick
~ 2-3 cloves |
~ Filling ingredients:
~ 1 cup of crushed almonds
~ 1/4 a cup of crushed walnuts
~ 1/2 a tsp of cinnamon powder
~ 2 tbsp of sugar
~ 2 egg whites |

~ For garnishment:
~ 1/2 a cup of crushed roasted almonds
~ Place in a bowl the flour and salt and mix.
~ Add the oil and again mix well.
~ Add the egg yolks and water and knead until the dough becomes thick.
~ Cover the dough with a kitchen towel and let it sit for about an hour.
~ Place all the filling ingredients in another bowl and mix well until the mix is nice and thick.
~ As the dough is getting ready for use you can prepare the syrup.
~ Place all the ingredients in a sauce pan and in low heat, prepare the syrup until it thickens slightly.
~ By this time your dough is ready for use.
~ Knead again for a few minutes and divide it in several pieces according to the space you have to roll it out.
~ Roll out the dough in thin sheets and cut in rectangular pieces about 4x3 inches.
~ In each cut piece place in the center 1 tsp of the already prepared filling.
~ Fold over length wise and with a fork press the ends for the dough to join.
~ After you have used all the mix you prepared, fry Thaktila in plenty of oil until they get golden brown and place on paper towel to drain the oil.
~ Before Thaktila get cold, dip them in the ready mixed syrup and strain again the excess.
~ Place them in a platter and sprinkle them with the crushed roasted almonds.
~ If any dough is left, fry it, dip it in the remaining syrup and enjoy.
