Tahinosoupa (Tahini Soup)

~ Ingredients:

~ 1 cup of tahini paste
~ 2 tbsp of olive oil
~ 1 tbsp of flour
~ 2 carrots
~ 3 leeks
~ 2 potatoes
~ Little celery
~ 1 tbsp of finely chopped parsley
~ salt and pepper to taste  
Vegan Tahini Soup
   

 

~ Peel, cut in small pieces and wash the potatoes and carrots.
~ Wash and cut in small pieces the leek and celery.
~ Pour the olive oil in a casserole and heat up.
~ Add the flour and stir to mix with the oil.
~ Pour in some hot water and mix well until the flour is dissolved.
~ Add the vegetables, parsley, salt and pepper to taste and mix all together.
~ Cover the pot lower the heat and let it simmer until the vegetables are cooked.
~ When the vegetables are cooked, add the tahini paste and stir to mix and dilute with the broth.
~ Add some more hot water if needed to thin out the soup to your taste.
~ Simmer for about 5 more minutes and remove from the heat.
~ Pour into a big soup bowl or individual soup bowls and serve.
