Apoksiramenes (Liastes) Tomates se Lathi Pesto
(Sun-dried Tomatoes in Oil Pesto)

~ Ingredients:

~ 80g of marinated in olive oil dried tomatoes
~ 200ml of olive oil
~ 40g of grated Parmesan
~ 6-8 tbsp of toasted pine nuts
~ 80g of fresh basil
~ 3 large garlic cloves
~ Salt and pepper to taste 
Sun-Dried Tomato Pesto
   

 

~ Drain the tomatoes from the oil.
~ Using a blender, blend the garlic and basil.
~ Add parmesan cheese, pine nuts and olive oil.
~ Add in the pesto salt and pepper to taste.
~ Add the dried tomatoes.
~ Do not put too much salt because the tomatoes and parmesan cheese have enough salt.
~ Remove the pesto from the blender, use as much as you need for the moment and you can refrigerate the rest (if any) for future use.
~ Sun-Dried Tomato Pesto is so easy to make, you don’t have to do too much at a time.
~ Sun-Dried Tomato Pesto can be used and enjoyed over Pastas, Salads, as a Bread Spread or as a Vegetable Dip.
