Spitikes Pites (Homemade Pita Bread)

| ~ Ingredients: ~ 4 cups of all-purpose flour ~ 2 tsp of active dry yeast ~ 1-1/4 cups and warm water ~ 1 tbsp of vegetable oil ~ 2 teaspoons of white sugar ~ 1 1/4 tsp of salt |

| ~ Place flour in a large bowl and add salt, sugar and dry yeast and mix. ~ Add the oil and mix with your hands. ~ If using a mixer place all ingredients in the mixers bowl with half of the water and start the mixer. ~ Add the rest of the water a little at a time until you get the desire dough mixture. ~ Turn dough onto a lightly floured surface. ~ Gently roll and stretch dough into a 12 inch rope. ~ With a sharp knife, divide dough into 10 pieces. ~ Roll each into a smooth ball. ~ With a rolling pin, roll each ball into a 6 to 7 inch circle. ~ Set aside on a lightly floured countertop. ~ Cover with a kitchen towel and let pitas rise for about 30 minutes until slightly puffy. ~ Preheat oven to 500 degrees F (260 degrees C). ~ Place 2 or 3 pitas on a wire cake rack. ~ Place cake rack directly on the oven rack. ~ Bake the pitas 4 to 5 minutes or until they are puffed and tops begin to brown. ~ Remove from the oven and immediately place the pitas in a sealed brown paper bag or cover them with a damp kitchen towel until soft. ~ Once the pitas are softened, either cut in half or split top edge for half or whole pitas. ~ They can be stored in a plastic bag in the refrigerator for several days or in the freezer for 1 or 2 months. ~ Use the pitas with Souvlaki, as bread or with dips or appetizers. ~ Good luck and bon appétit. |
