Spetsofa'i (Greek Sausages with Peppers)

| ~ Ingredients: ~ 1 kg of peppers ~ 400g of ripped, peeled, chopped tomatoes ~ 2 onions chopped ~ 4-5 cloves of garlic chopped ~ 4 Greek sausages (Loukanika) ~ 5 tablespoons olive oil ~ 1/2 teaspoon of sugar ~ Thyme and Oregano ~ A pinch of Nutmeg ~ Salt and black pepper to taste ~ Chopped parsley |

| ~ Wash peppers, cut in half, remove the seeds and cut into rough strips. ~ Cut sausages into large slices. ~ Heat olive oil in a frying-pan, fry the sausage slices on all sides and remove. ~ Place strips of pepper into the pan and fry until the excess fluid is vaporized ~ Remove peppers from the pan. ~ Add the onions add garlic in the pan and sauté. ~ Sprinkle with sugar, thyme, oregano and nutmeg, add the chopped tomatoes, stir and let boil briefly. ~ Add the sausages and peppers back into the pan, mix well and let simmer on low heat for about 45 minutes. ~ If necessary add some water, but the sauce should be thick. ~ Let Spetsofa'i cool down for a few minutes. ~ Sprinkled with parsley and serve. ~ Good luck and bon appétit. |
