Σαλατα Θαλασσινων (Seafood Salad)

~ Ingredients for 4-6 portions:

~ 600gr of fresh small octopuses or squids
~ Juice from 3 lemons
~ 4 tbsp of vinegar from red wine
~ 1 kilo of mussels
~ 300gr of prawns (Garithes) with the shell (optional)
~ 30gr of broadleaved parsley
~ 3 cloves of garlic
~ 1 red hot pepper (chilli)
~ 6 tbsp of virgin olive oil
~ Salt and pepper to taste  
   

 

~ In order to clean small octopuses or squids, pull carefully the heads and the tentacles from the rest of the body.
~ Remove the hard part of the squid and the sac with the ink and throw them away.
~ Cut the head and the tentacles from the rest of the body and remove it.
~ Press from the outside the suction cups of the tentacles, remove them also and throw them away.

~ Skin the bodies and meticulously rinse them on both sides under plenty of running water.
~ In a saucepan boil 1lt of water with the juice from 1 lemon, the vinegar from red wine and 1/2 a tbsp of salt.
~ Add the bodies and the tentacles from the squid and or octopuses, cover with the lid and boil for 15-20 minutes on medium heat (depending on the size of seafood) until they get soft.
~ Remove from the heat and leave the seafood aside to cool down in their broth.
~ Scrape the mussel shells under running water and remove their beard with the angle end of the knife.
~ Strike suddenly all the mussels that are open and, if they do not close, throw them away.
~ Boil l litre of water, add the mussels, cover the saucepan and cook on high heat until the mussel shells open.
~ Throw away all mussels that did not open.
~ Remove the remainder mussels from their shells and sprinkle them with the juice of half lemon.
~ If we want to also use prawns (Garithes), rinse with the shell on and throw them in salted boiling water, after we have added the juice from half lemon.
~ Boil for about 5 minutes, strain them in a strainer and set aside to cool down.
~ Remove the shell, make a cut in the back part of each prawn, remove the black intestine and rinse with warm water.
~ Pour away the broth from the squids (or octopuses) and dry them completely.
~Cut the squid bodies in thin rings and the tentacles in small pieces.
~ Mix the mussels, the prawns and the squids (or and octopuses) in a bowl.
~ Wash the parsley and shake it to dry and fine chop it.
~ Peel and chop the garlic.
~ Cut in the middle and at length the hot pepper, remove the seeds and cut in bands.
~ Mix the parsley, the garlic and the pepper with the seafood mixture.
~ Sprinkle the seafood with the lemon juice; add the olive oil, sprinkle with fresh ground pepper and mix.
~ Set the seafood salad in a cool place (not in the refrigerator) to be marinated for at least 2 hours before serving.
~ Place the salad in a platter, mix well, and serve.
~ Σαλατα Θαλασσινων (Seafood Salad) is very refreshing, nutritious and very appetizing.
~ Seafood salad can be served as a side dish or even as an appetizer with a glass of Greek Wine of choice or even a shot of Greek Ouzo.
