| ~ Ingredients: ~ 1-1 1/2 pound of fish (whitebait, mullet, bonito) ~ 1/2 a cup of olive oil ~ 1 cup of vinegar ~ 1 head of garlic finely chopped ~ 1 bunch of rosemary ~ 3-4 bay leaves ~ 1 package of dried black raisins ~ Flour for coating ~ 1 lemon ~ Salt and pepper to taste |

| ~ Scale and clean the fish. ~ Wash the fish under plenty of running water and place in a platter side by side. ~ Drain any excess water, squeeze the lemon over the fish, cut the lemon cups and place then over the fish. ~ Put the platter aside for about an hour or more in order for the fish to absorb at least some of the lemon. ~ Place some flour into another plate and mix it with some salt and pepper. ~ Heat up the olive oil in a large frying pan. ~ Roll the fish in the flour making sure they are coated all over and fry them in the hot oil from both sides until golden brown but not burned. ~ When they are fried place them into a clean platter and set aside. ~ In the remaining oil that is left in the pan sauté the chopped garlic. ~ Add all the remaining ingredients and pour the vinegar over them. ~ Let it boil for a while in vinegar and pour the sauce over the fish. ~ Allow time for the fish and sauce to cool down and serve. ~ Savoro Lefkathas (Fish in Savoury sauce (Lefkadas) can be served as a mezes (appetizer) with a good white wine or ouzo or as a side dish with French fries or rise pilaf and a Greek salad. ~ Good luck and enjoy. |
