Saltsa Tomatas (Tomato Sauce)

~ Ingredients:

~ 1 kilo of ripped tomatoes
Or 2 tbsp of tomato paste
~ 1 onion finely chopped
~ 2-3 cloves of garlic
~ 3-4 stalks of parsley chopped
~ 3-4 stalks of celery chopped
~ 3 tbsp of butter
~ 1-2 teacups of meat juice
~ Salt and pepper to taste 

 
Meatballs with Tomato Sauce over Rice (Yiouvarlakia/Soutzoukakia in Greek)
   

 

~ Wash well and grade the tomatoes.
~ In a large sauce pan melt the butter and let it get hot.
~ Add in the hot butter the onions and the chopped garlic to be lightly sautéed.
~ Add the graded tomatoes, (or the 2 tbsp of tomato paste diluted in 2 teacups of water) meat juice, (or 1 teacup of water) chopped parsley, chopped celery, salt and pepper to taste.
~ Cover the sauce pan and let simmer on low heat until the sauce thickens.
~ Tomato Sauces usually are used on Greek Pastas and Greek pilafs.
