Saltsa Psitou (Oven Roast Sauce)

| ~ Ingredients: ~ 3-4 tbsp of butter from the Roast ~ 2 tbsp of flour ~ 1 1/2 -2 cups of water ~ Salt and pepper to taste |

| ~ When we cook our roast in the oven and we take it out of the baking pan, we slice it and keep it aside until we make the sauce. ~ From the juice left in the baking pan, take out about 3-4 tbsp of the butter and pour it into a sauce pan. ~ In the meantime, pour 11/2-2 cups of lukewarm water into the baking pan and scrape what ever is stack on the bottom of the pan. ~ Place the baking pan on the oven and boil for a few minutes. ~ Heat up the butter you took out of the pan and placed into a sauce pan and put the flour in and stir until the flour is diluted well. ~ Strain the heated water and the remains of the roast and pour it in the sauce pan with the diluted flour. ~ Add some salt and pepper to taste, stir and when it thickens to the desire thickness, pour into a sauce dish and serve with your roast. ~ Good luck and enjoy. |
