Saltsa Kima (Greek Meat Sauce)

| ~ Ingredients: ~1 lb of lean ground veal or (beef, pork, chicken, etc.) ~ 3 tbsp of butter or olive oil ~ 1/2 a cup of red dry wine ~ 1 onion finely chopped ~ 1-2 garlic cloves finely chopped ~ 2-3 tomatoes grated or chopped ~ 2 tbsp of tomato paste ~ 1/2 a tsp sugar ~ 1 cinnamon stick ~ 1 bay leaf ~ 5-6 cloves ~ 4 tbsp of chopped parsley ~ Salt and pepper to taste |

| ~ Using a saucepan or a frying pan, pour the olive oil or butter and sauté the chopped onions and garlic until they are soft and translucent. ~ Add the ground meat, stir to mix with the onions and cook until the raw color disappears. ~ Add the chopped parsley and stir to mix with ground meat and onions. ~ Add the wine, cover the pan and simmer for 5 minutes. ~ Add the tomatoes and tomato paste diluted in 1/2 a cup of hot water. ~ Add the sugar, cinnamon stick, bay leaf, cloves and salt and pepper to taste. ~ Stir to mix all ingredients together. ~ Lower the heat and simmer for about 30 minutes or until almost all the liquid has evaporated and a thick sauce remains. ~ Stir from time to time so the flavours from the herbs and spices are blended together with the meat sauce. ~ Remove from the heat, remove the cinnamon stick and as many clove you can find and serve. ~ Saltsa Kima (Greek Meat Sauce) can be used over pasta, in the Greek Pastistio, Greek Moussaka, in a Greek Omelette, Pies and so many other Greek Dishes. ~ Above ingredients are for 4 servings, increase the ingredients for larger quantities. ~ Good luck and enjoy. |
