~ Saganaki is what a lot of people know it as OPA.
~ OPA in Greek is just an expression of joy and not the name of the food.
~ Saganaki is made out of Greek cheeses imported directly from Greece.
~ It can be found at all Greek importing product companies and at the majority of Greek stores.
~ There are two kinds of cheeses that can be used to make Saganaki.
~ One is called Kaseri and the other one is Kefalograviera.
~ In Cyprus, for Saganaki, the local cheese is being used called Halloumi.
~ It is a matter of preference of which cheese people like using.
~ One is a little milder than the other.
~ At some Greek restaurants, other types of Saganaki are being offered like Greek sausage Saganaki, or even shrimp Saganaki.
~ Saganaki is either fried or broiled.
~ Fried Saganaki, some people or restaurants use egg and flour and some don’t. Again it is a matter of preference.
~ In this recipe we will use the egg and flour.
