Rotini me Kounoupithi (Rotini with Cauliflower)

| ~ Ingredients: ~ 500 gm of Rotini Pasta ~ 1 onion finely chopped ~ 1 small cauliflower ~ Olive oil ~ Dry red Pepper to taste (Optional) ~ 2 large ripped tomatoes diced ~ 1 tbsp of tomato paste ~ 1 cup of red dry wine ~ 2 tbsp of chopped black Kalamata olives ~ Oregano ~ Salt and pepper to taste |

| ~ In a large pan, heat up some olive oil and sauté the chopped onion. ~ Add the diced tomatoes, the tomato paste diluted in the red wine, the black Kalamata olives, red pepper (Optional) or powder pepper and some oregano. ~ Do not add too much salt if you olives are salted already. ~ Simmer the sauce for about 20 minutes and add more wine if it gets dry. ~ While the sauce is simmering! ~ Wash and cut the cauliflower in small pieces. Only the flower part is to be used. ~ Place in a pan of boiling water with a dash of salt. ~ Boil for about 5 minutes. No more. ~ Take cauliflower out of the boiling water and into the sauce. ~ In the same boiling water add your Rotini pasta and cook for 10 minutes. ~ Drain the water, pour pasta into the sauce and stir to mix. ~ Place directly into plates or a platter and serve. ~ Serve with plenty of grated Mitzithra or Parmesan cheese. ~ Good luck and bon appétit. |
