Rosto Chirino (Pork Roast)

| ~ Ingredients: ~ 1-2 kg of pork leg ~ 1/2 cup of olive oil ~ 1 cup of water ~ 1/2 cup of white dry wine ~ 1-2 large onions cut in quarters ~ 2 carrots ~ 2 stalks of celery ~ 2-3 cloves of garlic cut in half ~ 2 small sprigs of rosemary ~ Salt and pepper to taste |

| ~ Sauce Ingredients: ~ 1-2 tbsp of corn flour or plain flour |

| ~ Wash the meat and remove part of the fat if any. ~ Make an X cut in deferent places of the leg and insert the garlic. ~ In a large baking pan lay the celery, carrots, onions and the rosemary and add the olive oil. ~ Pour the wine over the meat, salt and pepper to taste and place it over the vegetables in the pan. ~ Pour remaining wine in the pan add the water, cover with aluminum foil and place in a preheated oven to 350 degrees for about 1 1/2 - 2 hours, according to your cooking preferences. ~ After about 45 minutes to an hour, every 20 minutes baste the meat with it’s own juice. ~ When cooked remove from the pan, place in a platter and cut in thin slices. ~ Strain the juice and pour into a sauce pan. ~ Bring to boil and while stirring, slowly add the corn flower until the sauce thickens. ~ Garnish with mashed potatoes and vegetables and pour some sauce over the meat and potatoes. ~ Good Luck and Bon Appétit. |
