Saltsa me Kokkino Krasi (Red Wine Sauce)

| ~ Ingredients: ~ 1 cup of dry red wine ~ 1/4 cup of balsamic vinegar ~ 2 tbsp of olive oil ~ 4 tbsp of unsalted butter ~ 3 cups of beef broth (Preferably Homemade) ~ 2 tbsp tomato paste ~ 1 yellow onion roughly chopped ~ 1 med carrot roughly chopped ~ 2 stalks of celery roughly chopped ~ 5 garlic cloves minced ~ 1 tbsp of fresh rosemary finely chopped ~ 2 bay leaves ~ 1/2 tsp freshly ground black pepper to taste ~ Salt to taste |

| ~ In a large saucepan over med-high heat, warm the olive oil. ~ Add the onion, carrots, and celery and cook for about 6 to 8 minutes, stirring occasionally or until the vegetables are browned. ~ Add the garlic and cook for about 2 more minutes stirring occasionally. ~ Reduce heat to medium; add the tomato paste, and cook for about 2 more minutes more, stirring often. ~ Add the beef broth, wine, vinegar, rosemary, bay leaves and pepper. ~ Simmer with the pot uncovered for 45 minutes. ~ Strain the sauce through a fine sieve into a medium saucepan pressing down on the solids with the back of a spoon. ~ Continue to simmer for about 45 more minutes more or until about 3/4 of a cup of liquid remains. ~ Add the butter 1 tbsp at a time whisking to melt completely before adding the next piece. ~ Season with salt and pepper to taste, stir and remove from the heat. ~ Pour into a Sauce Boat and serve with your favourite beef dish. ~ Homemade Red Wine Sauce to serve with your favourite Greek Beef dishes, over Mash Potatoes and many other dishes. ~ Good luck and enjoy. |
