Psarosoupa (Fish Soup)

~ Psarosoupa is another traditional Greek soup, since Greece is surrounded by water where the fish is fresh in the market every day.
~ For this recipe you can add any other seafood you prefer.

  • ~ Ingredients:
  •  
  • ~ 1 1/2 kilo of fresh sea food
  • ~ 1 cup of finely chopped onions
  • ~ 1/2 a cup of ripped diced tomatoes
  • ~ 1/2 a cup of rice
  • ~ 1 cup of shopped carrots
  • ~ 1 cup of diced potatoes
  • ~ 1/4 cup of fresh lemon juice
  • ~ Salt and pepper to taste

~ Clean and wash fish well.
~ Place the fish (and the rest of the sea food of your choice) in a pan with about 3 liters of water and cook well.
~ When the fish is cooked, strain the broth into another pan.
~ Add all the vegetables, (onions, carrots, potatoes) and let them cook.
~ In the meantime debone the fish and the rest of the sea food and put back in the pan with the rise.
~ When the rice is cooked, add the tomatoes, olive oil, salt and pepper to taste.
~ 5-10 minutes later remove the soup from the heat.
~ Add the lemon juice, stir and you are ready to serve.
~ Place in soup bowls, garnish with parley and serve.
