| ~ Ingredients: ~ 1 kg of small fish (red mullet) ~ 4 tbsp of flour ~ 2 ripped tomatoes grated ~ 1/2 a cup of wine vinegar ~ 5-6 tbsp of olive oil ~ 1 cup of water ~ 3 garlic cloves chopped ~ 2-3 springs of rosemary ~ 1 bay leaf (optional) ~ Salt and pepper to taste ~ Flour & olive oil for frying |

| ~ Clean and wash the fish under plenty of running water. ~ In a deep plate mix the flour with salt and pepper to taste. ~ Take one fish at a time and deep it into the flour mixture making sure that is very well coated. ~ Ones all the fish are coated with flour; fry them in hot olive oil until golden brown on both sides. ~ Place the fried fish into a baking pan one beside the other. ~ In a clean frying pan, heat up the 5-6 tbsp of olive oil; add the 4tbsp of flour and stir until is dissolved. ~ Add the vinegar, rosemary, chopped garlic, bay leaf, grated tomatoes and water. ~ Stir until is boiled and until a batter is formed. ~ Pour the battered mixture over the fish and bake in a preheated oven at 350 degrees Fahrenheit (see conversions) for about 10-15 minutes. ~ Remove from the oven, let it cool down and refrigerate. ~ Psari Savoro me Tomates (Mullet in Savoury Tomato Sauce) is served cold as a side dish or appetizer. ~ Good luck and bon appétit. |
