Pastitsio (Greek Style Lasagna) (Macaroni with Layers of Minced Meat)

~ Ingredients:
 
~ 1 kilo of macaroni #2
~ 1 cup of grated cheese (choice)
~ 1 tblsp of salt
~ 2 tblsp of of oil
~ Breadcrumbs
~ Ingredients for cream:
 
~ 4 cups of fresh milk
~ 1/2 a cup of grated cheese (choice)
~ 4 egg yolks
~ 1/2 a cup of corn oil
~ 8 tbsp of flour (or corn flour)
~ 3 tbsp of butter
~ 1/4 tsp of powder nutmeg
~ Salt and pepper to taste
~ Ingredients for minced meat:
 
~ 1 kilo of minced meat (best if pork and beef mixed)
~ 1 cup of finely chopped ripped tomatoes
~ 1/2 a cup of dry white wine
~ 1 tbsp of finely chopped parsley
~ 1 tbsp of finely chopped onions
~ 1 tbsp of tomato paste
~ Salt and pepper to taste
   

 

~ First we prepare the minced meat:

~ Add corn oil in a frying pan to heat up; add the chopped onions and fry a little bit.
~ Add the minced meat and stir until golden brown.
~ When golden brown add the white wine, chopped tomatoes, tomato paste, parsley, salt and pepper.
~ Mix all together, lower the heat and simmer for about 30 minutes.
 
~ Preparation of the macaroni:

~ Boil water and add the oil and salt (stir for the salt to dissolve).
~ Add the macaroni (stir a few times so the macaroni don't stick together), cook for about 6-8 minutes.
~ Drain and place in a large bowl.
~ Sprinkle with grated cheese of your choice (In Cyprus they also sprinkle with dry mint, pepper and cinnamon powder).
~ Oil the baking pan you will use and sprinkle breadcrumbs all over the bottom.
~ Place a layer of about half of the macaroni.
~ Add the minced meat and spread so it covers all the macaroni.
~ Place the rest of the macaroni on top.
 
~ Preparation of the cream:

~ Heat up milk with the butter until it boils.
~ Take some of your boiled milk and add it to the flour, blend it well so there are no lumps.
~ Add slowly the flour mixture and stir constantly with a Wisk.
~ Stir until it becomes a thick cream.
~ Remove from heat.
~ Beat the egg whites in the form of a thick meringue.
~ Add the well beaten egg yolks in the meringue and mix.
~ Add slowly the egg mixture to your cream stirring constantly.
~ Mix well.
~ Pour cream over the macaroni, making sure that it is all covered.
~ You can even make sure that some of the cream can go everywhere even on the side of the macaroni.
~ Sprinkle with some grated cheese and place in the preheated oven.
~ Bake for about 50-60 minutes at 350 degrees or until golden brown.
~ Take it out of the oven, let it cool down a little bit, cut in square servings and serve.
~ Pastitsio can be served as an appetizer or as a main dish.
~ Pastitsio can be served hot or cold.
