~ Select as many fresh green olives as you want, wash well and dry. ~ With a hammer or even a stone beat them slightly until they are cracked. ~ Place them in a container and cover them with cold water. ~ Change water daily for six days. ~ After the sixth day place them in glass jars (preferably). ~ For every cup of water dissolve one tablespoon of salt (preferably sea salt), add some fresh squeezed lemon Juice. ~ Pour in jars until it covers the olives. Add some olive oil on top to preserve them and store in a cool place. ~ To serve the cracked green olives, place some in dish, wash them well, and add olive oil, fresh squeezed lemon, crushed cloves of garlic and some crushed coriander. |
