Χταποδι με Κοφτο Μακαρονακι (Octopus and Macaroni)

~ Ingredients:

~ 1 kilo octopus
~ 1 cup of macaroni
~ 1 cup of olive oil
~ 1 kilo ripped tomatoes grated
~ 1 onion finely chopped
~ 1 fresh onion (Scallion) finely chopped
~ Salt and pepper to taste

~ Clean and wash the octopus under plenty of running water.
~ Pour some water in a saucepan and some salt and put the octopus in.
~ Boil the octopus for enough time (until the octopus is tender) and then remove it from the boiling water and cut it in small pieces.
~ Do not throw away the water you boil the octopus in.
~ In another saucepan we pour the olive oil and sauté the chopped onion and the chopped fresh onion (Scallion).
~ As soon as the onions are sautéed and being translucent add the grated tomatoes, salt to taste and 3 cups from the water in which the octopus was boiled in.
~ Allow the sauce to boil for few minutes and add the chopped up octopus.
~ After 15 minutes add 2-3 cups of hot water and as soon as it begins to boil we throw in the macaroni.
~ Stir the food to mix the macaroni with the rest of the ingredients and let it simmers until all the broth is gone and macaroni is soft.
~ At the end add the pepper to taste.
~ Remove from the fire and serve hot with a glass of dry white wine.
~ If desire, serve some grated mitzithra or any grated cheese of choice on the side.
