~ 1/2 ounce Lillet blanc
~ 2 1/4" thick slices of fresh ginger.
~ 1 orange peel
~ Combine rye and Metaxa and 1 slice of ginger in a mixing glass.
~ Muddle the ginger slice to extract flavor, crushing well to get some juice out (the spirits should look a little cloudy).
~ Add remaining ingredients and ice and shake for 10-12 seconds.
~ Double-strain into a rocks glass over ice.
~ Garnish with additional ginger slice and orange peel.
~ This is an interesting cocktail.
~ We've tried all kinds of mojitos before and these are very different since they used the Greek liqueur in place of rum.
~ We prefer to use less lemon/lime juice to make them a little sweeter.
~ Just a splash of club soda is all you need.

~ 2 teaspoons of brown sugar
~ 1/2 ounce lime juice, freshly squeezed
~ 1 1/2 ounces Metaxa 5*

~ In a cocktail shaker, muddle the mint with the brown sugar and lime juice.
~ Add the Metaxa, lemon juice and ice.
~ Shake well and strain into an ice-filled highball glass.
~ Top with a splash of the club soda.
~ Use less lemon/lime juice if you prefer a sweeter drink.
