Kolokithokeftethes (Zucchini Croquettes)

| ~ Ingredients: ~ 500g of zucchini ~ 100g of feta cheese chopped ~ 1/2 a cup of grated kefalotiri cheese ~ 1 medium potato boiled and mashed ~ 1 large egg ~ 2 tbsp of breadcrumbs ~ Fresh chopped mint ~ Pepper to taste ~ Flour ~ Olive oil for frying |

| ~ Wash the zucchini and dry with paper towel. ~ Grate zucchini with the grater with large holes. ~ Place grated zucchini in a strainer and sprinkle with some salt and mix. ~ Set aside and let it strain the excess water for about an hour. ~ In the meantime boil 1 medium size potato and mash it. ~ After an hour squeeze the grated zucchini to take all the water out of it and place in a bowl. ~ Add the egg, crumbled feta cheese, grated Kefalotiri cheese, breadcrumbs, mashed potato, mint, pepper to taste and 1 tbsp of flour. ~ Knead well with your hands to mix all ingredients. ~ Cover the bowl with plastic wrap and place in the refrigerator for about 1/2 an hour. ~ Form into small ball, roll into flour and fry in hot oil all over until brown on the outside. ~ Place on paper towel to drain the excess oil and serve. ~ Kolokithokeftethes (Zucchini Croquettes) are usually eaten as a hot appetizer or as a side dish but they can also be eaten cold. ~ Good luck and enjoy. |
