Kimathopita (Minced Meat Pie)

~ Ingredients:

~ 1 kilo if minced meat
~ 1 pack of Filo pastry
~ 2 cups of milk
~ 1 cup of grater Kefalotiri cheese
~ 1/2 a cup of melted butter
~ 5 eggs
~ 2 bread slices
~ 2 onions finely chopped
~ 2 tbsp of parsley finely chopped
~ 3-4 ripped tomatoes or 1 tbsp of tomato paste
~ 1 cinnamon stick
~ Salt and pepper to taste 
   

 

~ Using a saucepan or a frying pan, put 1/2 of the butter and sauté the chopped onions and until they are soft and translucent.
~ Add the ground meat, stir to mix with the onions and cook until the raw color disappears.
~ Add the grated tomatoes or the tomato paste diluted in 1/2 a cup of hot water.
~ Add the cinnamon stick, chopped parsley and salt and pepper to taste.
~ Stir to mix all ingredients together.
~ Lower the heat and simmer for about 30 minutes or until almost all the liquid has evaporated and a thick sauce remains.
~ In the meantime pour the milk into a deep plate and place the bread slices in to soak.
~ Remove the minced meat mixture from the heat and remove the cinnamon stick from it and discard.
~ Using a fork, mash the bread slices with a fork and add it to the minced meat.
~ Add the grated cheese and the eggs lightly beaten and mix all ingredients together.
~ In a medium buttered baking pan place 7-8 filo sheets buttering each one.
~ Place in the minced meat mixture making sure is distributed evenly everywhere.
~ Fold inwards over the minced meat whatever filo is overhanging buttering each one.
~ Place the rest of the filo sheets over the top buttering each one.
~ Cut the excess filo and butter the top filo.
~ With a sharp pointy knife cut the top filo to what ever shape you want (square, triangle, etc).
~ Bake in a preheated oven at 350 degrees Fahrenheit (see conversions) for about 30-40 minutes or until the top is golden brown.
~ Remove from the oven, let it cool down for about 30 minutes cut and serve.
