Keftethes me Fakes (Lentil Croquettes)

| ~ Ingredients: ~ 1 cup of bulgur washed and drained ~ 1 cup of red lentils washed and drained ~ 1 large onion finely chopped ~ 1/2 cup of olive oil ~ 1 tbsp of tomato paste ~ 2 tbsp cumin ~ juice of 1 lemon ~ 1 tsp of salt ~ Pepper to taste ~ 1/2 cup of parsley, chopped |

| ~ Wash the lentil under plenty of running water. ~ Place lentil in a pot with 2 1/2 cups of water and cook on low heat. ~ In the meantime wash and drain the bulgur. ~ Add the bulgur in the pot with the lentil stir to mix and cook until all the water is gone. ~ Remove the pot from the heat, cover the pot with a kitchen towel and set aside. ~ In another pot pour the olive oil and sauté the chopped onion. ~ Add the tomato paste, lemon juice, salt, pepper to taste and gamin. ~ Stir well for the tomato paste to dissolve and mix with the rest of the ingredients. ~ Add the lentil and bulgur mixture and stir well to mix with the all the ingredients in the pot. ~ Cook on low heat, stirring occasionally for about 8-10 minutes until the mixture becomes doughy and starts to leave the sides of the pot. ~ Cover the pot and put aside for about an hour. ~ Mix in the chopped parsley by using your hands and give them the shape shown in the picture. ~ Place in the refrigerator to cool them down. ~ Keftethes me Fakes (Lentil Croquettes) can be eaten as an appetizer, side dish or they can be served on green leaves salad. ~ Good luck and bon appétit. |
