Kayiana or Strapatsatha (Scrambled eggs with Tomatoes)

| ~ Ingredients: ~ 4 eggs lightly beaten ~ 2 ripped tomatoes finely chopped ~ 1 red pepper finely chopped ~ 1 onion finely chopped ~ 1/4 cup of olive oil ~ Fetta cheese crumbled (optional) ~ Salt and pepper to taste |

| ~ Place olive oil in a frying pan and heat up. ~ After oil gets hot add the onions to cook until tender and translucent. ~ Add the red peppers and chopped tomatoes and cook until tender and juice has evaporated. ~ Add salt and pepper to taste. ~ Add the eggs and fetta cheese (optional) mix with the rest of the ingredients and stir until is cooked. ~ Place in a platter, garnish with parsley and serve. ~ Kayiana or Srapatsatha is served hot. ~ It can be accompanied with some fresh bread, Fetta Cheese, some Kalamata olives and a glass of red wine. ~ Good luck and bon appétit. |
