Pilafi Rizi (Greek Rice Pilaf)

| ~ Ingredients: ~ 1 cup of rice ~ 2 cups of hot water or broth (in place of broth mix) ~ 1 tbsp of chicken broth mix (in place of broth) ~ 1 medium size onion very finely chopped ~ 1 red pepper very finely chopped ~ 1 celery stick very finely chopped ~ 2-3 tbsp of olive oil ~ Salt and pepper to taste |

| ~ Pour the olive oil in a sauce pan to heat up. ~ Add the chopped onion and sauté until is soft and translucent. ~ Add the chopped peppers and celery and sauté for a few minutes. ~ Add the 2 cups of hot water and broth mix or 2 cups of chicken broth and stir to mix with the vegetables. ~ In the meantime, wash the rice under plenty of running water. ~ Add the rice to the sauce pan with the vegetables and broth, add salt and pepper to taste and stir to mix all ingredients. ~ Pour the rice mixture from the sauce pan into a baking dish and spread it out. ~ Cover the baking pan with aluminum foil. ~ Bake in a preheated oven at 350 degrees for about 35-45 minutes or until all the liquids are absorbed by the rice and the rice is cooked. ~ 1 cup of rice makes 2 servings accompanied with something else. ~ Adjust the ingredients for more servings as long as you have 1 part of rice to 2 parts of broth. ~ Greek Rice Pilaf can be accompanied by a lot of other Greek dishes like Grilled Chicken, Fish,, Stake, Soutzoukakia, a Greek Salad and most of all, Greek plain Yogurt. ~ Good luck and bon appétit. |
