| ~ Dough Ingredients: ~ 6 cups of flour ~ 1 tbsp of salt ~ 1/2 cup of olive oil ~ 1 1/2 cup of water or as much as it will take |
Filo Pastry

| ~ This recipe is usually made with a home made fillo for the taste or if you prefer you can use the already made fillo you can find frozen at any grocery store. ~ The procedure is the same and you can use more fillo sheets in between, bottom and top. |
| ~ In a large enough bowl mix all your filling ingredients except for the melted butter and let it sit until you have your dough prepared. ~ Place the flour in a bowl and mix well with salt. ~ Add the olive oil and with your fingers mix well until the oil is fully absorbed by the flour. ~ Gradually add the water and knead until the dough is firm. ~ Cover the bowl with a thick cloth and let it rest for about 45 minutes. ~ Knead again for about 5 minutes and now you are ready to open your home made fillo. ~ Cut your dough in 8-9 pieces and form into small balls. ~ With a dough roller, roll each ball into thin, long and wide sheet. ~ With a brush, brush lightly your cooking tray (about 2 inches beep) all over. ~ Place one fillo sheet on the bottom of your tray (do not cut any excess) and brush it with butter on the top. ~ Repeat with one more fillo sheet. ~ Spread some of your filling on and place another fillo sheet and again some of your filling. ~ Repeat the same process until you only have three fillo sheets left. ~ Fold in all your excess fillo. ~ Place the rest of your sheets on the top and brush with butter each one. ~ Place your tray in a preheated oven to 350 degrees Fahrenheit (see conversions) for about 1 hour or until golden brown. ~ Cut in square pieces and serve. It can also be eaten cold. ~ Good luck and enjoy. |
