| Morello Cherry Liqueur The Liqueur takes a while to make, but it is really worth it. ~ Ingredients: ~ 1 kilo of black cherries ~ 11/2 kilo of sugar ~ 2 cinnamon sticks ~ 4 cloves ~ 2 whole nutmegs ~ 1 liter of Metaxa brandy or cognac |

| ~ Remove the stems and wash the cherries with soap and water. ~ Rinse them well and set aside to drain. ~ Wash and rinse a large mouth, screw top jar. ~ Add the drained cherries, sugar, cinnamon, cloves and nutmegs. ~ Cover tightly and give the jar a shake. ~ Place the jar on a sunny windowsill for 1 month. ~ Don’t open the jar during this time, just shake it occasionally. ~ After one month, open the jar and add the cognac. ~ Close the lid tightly and again, set it on the windowsill for another 10 days. ~ The liqueur will be ready. ~ Using cheesecloth, strain the liqueur into bottles. ~ Personally, I prefer to keep it as is with the fruit and spices. ~ I think it ages that much better. ~ And the cherries really pack a punch! ~ Good Luck and enjoy. |
| Sour Cherry Liquor ~ Ingredients: 2 kilos or sour cherries 2 kilos of cognac 2 kilos of sugar 15 cloves 5 sticks of cinnamon 10 small unripe mandarins |

| ~ Remove the stems and wash the sour cherries with soap and water. ~ Rinse them well and set aside to drain. ~ Wash and rinse a large mouth, screw top jar. ~ Add the drained cherries, sugar, cinnamon, cloves and mandarins. ~ Cover tightly and give the jar a shake. ~ Place the jar on a sunny windowsill for 1 month (preferably July- August). ~ Don’t open the jar during this time, just shake it occasionally. ~ After one month, remove it from the sun, open the jar and add the cognac. ~ Close the lid tightly and shake the jar to mix. ~ Store the Sour Cherry Liquor in a cool place for a few days. ~ The liquor is ready. ~ Using cheesecloth, strain the liqueur into bottles. ~ Good Luck and enjoy. |
| Orange Liqueur ~ Ingredients: ~ 350 gr of sugar ~ 170gr of orange skins ~ 1250gr of alcohol ~ Few cloves and cinnamon sticks |

| ~ Clean the orange skins so there is no remains of the white part. ~ Place them in a mortar a few at a time and crush them with some sugar. ~ In a glass container (that would seal well, in order for the perfume not to escape), pour the alcohol and the crushed orange skins and set it aside for 5-6 days. ~ In a sauce pan, pour some water, add the sugar and boil for about 1 -2 minutes, adding in the cloves and cinnamon. ~ When it cools down pour it in the glass container, that we have the orange skins and alcohol and set it aside again for 5-6 days. ~ Every second day shake the glass container to mix the ingredients. ~ After the 5-6 days have passed, pour the jar liquid through cheese cloth or a fine strainer with buckram twice. ~ The orange liqueur is ready. ~ The same way (and with the same proportion) the liqueur of mandarin, lemon, citron, bitter orange can be made. ~ Good Luck and enjoy. |
