Ellinika Biftekia (Greek Hamburgers)

~Ingredients:

~ 640gr of lean ground beef
~ 640gr of lean ground pork
~ 1 cup of breadcrumbs
~ 2 tbsp of olive oil
~ 1 tbsp of white vinegar
~ 2 onions finely chopped
~ 1/2 a bunch of parsley finely chopped
~ 4 eggs
~ 3-4 garlic cloves minced or grated
~ Oregano
~ Salt and pepper to taste

~ The reason we use ground beef and pork is to make the Biftekia (Hamburgers) taste better and not being too hard after grilling. (Personal Choice)
~ Place the two different kinds of ground meat in a large bowl.
~ Knead the ground meat together so every Bifteki (Hamburger) has both kinds.
~ Add the rest of the ingredients in the bowl with the meat, including oregano and salt and pepper to taste.
~ Knead well to mix all ingredients with the meat.
~ Using a little gadget (Hamburger maker) for making Hamburgers (if available) set it up to 1/3 lb.
~ Cut some parchment paper to the size of the gadget and place it in the opening.
~ Add enough of the meat mixture in the Hamburger maker and flatten out even to the top of the opening.
~ Place in a shallow baking tray until all meat mixture is used.
~ If there is not a Hamburger maker available, shape the Biftekia (Hamburgers) by hand to any size you want.
~ Note that the Bifteki (Hamburger) will shrink by at least 1/4 of its original size when it was raw.
~ What ever Biftekia (Hamburgers) are not going to be used for your meal of the day; you can freeze them for future use.
~ As they are on the shallow baking tray, Place the tray in the freezer.
~ Once they are frozen, place a parchment paper in between (for easier separation) them and put them in a freezer bag or a container.
~ When grilling homemade Ellinika Biftekia (Greek (Hamburgers) place on a hot grill on low heat.
