| ~ In the simplest form, keftethes (Croquettes) consist of balls of minced or ground meat usually beef or lamb, mixed with spices and/or onions. ~ The vegetarian variety like Tomato, Potato, Zucchini, etc and seafood like Octopus are very popular in Greece. ~ The meat is often mixed with other ingredients such as rice, Bulgur, vegetables, breadcrumbs or eggs to form a smooth paste. ~ Keftethes are sometimes made with fish or vegetables rather than red meat. ~ They can be grilled, fried, steamed, poached, baked or marinated, and may be served with a rich spicy sauce. ~ Variations of ingredients can be found from the southern part of Greece to the northern regions. ~ The northern regions of Greece can sometimes be influenced by their neighboring Balkan countries. ~ Keftethes can be an accompaniment to a main meal, can be a meal by it self accompanied by French fries or salad, or just yet a nice appetizer, good company and a glass of wine. |
