Γλυκο Σταφυλι (Grape Preserve)
~ 2 kilos of grapes
~ 2 kilos of sugar
~ 1 teacup of water
~ Juice of 1 lemon
~ 1 vanilla
~ 100 grams of almonds cut in four
|~ Wash the grapes well and you leave to dry.
~ Place the grapes in a large pot and add the water and sugar.
~ Bring to boil and boil for about 10 minutes for the sugar to melt and remove from the heat.
~ It may be needed to be skimmed but not after the first boil because the foam is just sugar.
~ Cover the pot with a thin cloth and leave aside for about 24 hours.
~ The following day, bring it to boil again on high heat and boil until the syrup starts getting thicker.
~ As soon as you see that the syrup is getting thicker, you can try it by taking some of the syrup with a spoon, pour it in a small plate, tilt it a little bit and the syrup should be runny and sticky.
~ If you want the syrup to be thicker, just let it boil for a few more minutes.
~ Little before you remove it from the heat, add the lemon juice, vanilla, cut almonds and stir to mix.
~ The lemon juice is essential because it acts as antiseptic and preservative.
~ Leave the Gliko Stafili (Grape Preserve) to cool down completely and place in sterilized jars.
~ Gliko Stafili (Grape Preserve) can be served to your guests as it is or it can be used as a spread on the bread as a jam.
