Gliko Karpouzi (Watermelon Peel Preserve)
~ 1 kilo of watermelon peel
~ 1 1/2 kilo of sugar
~ 1/2 a cup of lime (powder containing calcium)
~ 2 cups of water
~ A pinch of pure vanilla
~ Juice of 5 lemons
~ Juice of 1/2 a lemon for the finish
|~ Peel the watermelon peel on the outside from the green part and the inside red edible part so that only the white part remains.
~ Cut the peel into approximately 2X2 inches.
~ Dissolve the lime in water, add in the watermelon pieces, it should be enough to cover them and soak for 2 hours.
~ Remove from the water and rinse thoroughly to remove the lime.
~ Place the peel pieces in a pot, cover with water and bring to boil.
~ When boiling point is reached, change the water and add the juice of 1 lemon.
~ Place the pot over medium heat again and boil until they are cooked.
~ Pierce with a needle and if they fall off they are cooked.
~ Remove from the heat and put them immediately into cold water with the juice of 4 lemons.
~ Set aside for about 1 hour until they are crispy.
~ Remove from the cold water and place them back into the pot, add the sugar and 2 cups of water.
~ Place the pot over medium heat and boil again until the sugar is melted and the syrup is almost thicken.
~ Add the juice of 1/2 a lemon and vanilla and boil until the syrup sets.
~ Remove from the heat and set aside until it cools down completely.
~ Place in sterilized jars and store in the refrigerator.
