| ~ Ingredients: ~ 1 lb of lima beans ~ 3/4 of a mug of olive oil ~ 2 medium onions finely chopped ~ 1-2 carrots sliced (Optional) ~ 3-4 cloves of garlic sliced ~ 4 ripped peeled and grated tomatoes ~ 2 tbsp of finely chopped parsley ~ Salt and pepper to taste |

| ~ Soak the beans in water overnight. (Some people don’t do this) ~ Add the beans to a pot with enough cold water to cover them. ~ Bring water to boil reduce the heat and boil beans for about 15 minutes. ~ Drain the water and set aside. ~ Sauté the onions and garlic in the olive oil until soft. ~ Add tomatoes (if using canned, add all liquid as well), salt and pepper to taste, parsley, sliced carrots (Optional) and some water, simmer on low heat for 10-30 minutes, until it begins to thicken. ~ Place the beans in an oven pan, pour the tomato mixture, 1 cup of hot water, stir and spread mixture out evenly. ~ Place the pan in a preheated oven to 350 degrees, covered with aluminum foil and bake for about an hour or until the beans are cooked and the sauce has thicken. ~ Check periodically and add hot water if needed. ~ Remove from the oven, let it cool down for a few minutes and serve. ~ Gigandes (Greek Giant Beans Baked) can be eaten hot or cold. ~ Gigandes (Greek Giant Beans Baked) can be eaten as a main dish, side dish or as an appetizer. ~ Good luck and enjoy. |
