Garithomakaronatha (Greek Style Shrimp Pasta)

| ~ Ingredients: ~ 500g peeled prawns ~ 1 package of spaghetti ~ 4 ripped tomatoes grated or 2 cups of homemade tomato sauce ~ 2 carrots grated ~ 2 cloves of garlic sliced ~ A little dill or parsley ~ 1 onion finely chopped ~ 1 tbsp mustard ~ 1/2 a cup of cognac ~ 6 tbsp of olive oil ~ A pinch of salt ~ 2 tbsp of butter |

| ~ Clean and wash the shrimp under plenty of running water. ~ Pour the olive oil in a frying pan and sauté the shrimps on all sides. ~ Add the butter and allow it to melt. ~ Add the chopped onions, sliced garlic and sauté them for a few minutes. ~ Pour the cognac over the shrimp, stir and allow the alcohol to evaporate. ~ Once the alcohol evaporates, add the grated tomatoes, grated carrots, a pinch of salt and the mustard. ~ Stir well to mix all ingredients and let it cook for about 10 minutes. ~ If you like you can add some chopped parsley or dill. ~ In the meantime you half cook the spaghetti and have it ready. ~ After you cook the food for about 10 minutes, add the half cooked spaghetti and cook in the sauce with the shrimp for 3-4 more minutes. ~ Stir the spaghetti to mix with the sauce and shrimp. ~ Serve in a platter or in individual servings combining spaghetti, shrimp and sauce. ~ Sprinkle with grated cheese of choice. ~ Garnish with chopped parsley or dill. ~ Good luck and bon appétit. |
