Garithokeftethes (Shrimp Croquettes)

| ~ Ingredients: ~ 250 grams of small shrimps ~ 2 eggs ~ 100 grams of flour ~ 100 grams of butter ~ 1 cup of milk ~ 1 cup of fish broth ~ 2 lemons ~ 100 grams of breadcrumbs ~ A pinch of powder nutmeg ~ Parsley for garnishment ~ Salt and pepper to taste |

| ~ Put the butter in a saucepan on low heat to melt. ~ When the butter melts, add the flour and mix well until they are incorporated. ~ Add the milk, (always on low heat) and the fish broth and mix well until the mixture becomes a homogeneous thick sauce. ~ Remove from the heat and add salt and pepper to taste, a pinch of nutmeg and mix. ~ Add the shrimp, the juice of half a lemon and mix well for the shrimp and lemon juice to go everywhere in the mixture. ~ Add the egg yolks lightly beaten and mix well ~ Place some parchment paper in a baking dish and pour the mixture on it and flatten out to the thickness you want. ~ Leave it aside in order for it to cool down completely. ~ When the mixture cools down, cut in any size croquettes you want. ~ In a small bowl beat lightly the egg whites and one at a time dip the croquettes in and in turn in the breadcrumbs on both sides. ~ Fry the shrimp croquettes in hot oil for about 5 minutes on both sides or until they are golden brown without burning them. ~ After they are fried place the croquettes on a kitchen paper towel to remove any excess oil. ~ Place them in a platter, garnish with parsley and lemon wedges and serve hot. ~ Garithokeftethes (Shrimp Croquettes) can be served as snacks, main meal, side dish or as a hot appetizer. ~ Good luck and enjoy. |
