| ~ Sauces are the basic things for the preparation of deferent meal dishes. ~ Many times they complete the dish before is cooked (Pastitsio, Mousakas) and other times they are the base of preparing the dish (Soufle) ~ Many dishes don’t require a sauce during their preparation, but they are being accompanied with one. ~ There are many kinds of Sauces. ~ The basic and most characteristic Greek sauces are: Besamel, Mayonnaise, Tomato Sauce and Olive oil and Vinegar. ~ Once you learn how to make a nice Besamel, to prepare with patience a nice Mayonnaise, and to mix in the Olive oil and Vinegar deferent compliments then you know the secret for all the sauces. ~ All other sauces are just a change to the above. ~ Always prefer the light sauces, and avoid the once that are fattening and are over whelming the dish. |
