Diples (Turnovers)

~ Ingredients:

~ 2 1/2-3 cups of flour
~ 1 tbsp of baking powder
~ Juice of 1 medium orange
~ 1 cup of milk
~ 3 eggs
~ 4 tbsp of brandy
~ 2 tbsp of sugar
~ Vegetable oil for frying
~ 1 cup of honey
~ 1/2 a cup of warm water
~ 1 cup of coarsely chopped walnuts
~ Cinnamon powder

~ In a large bowl mix 2 1/2 cups of flour with baking powder.
~ Make a well in the middle of the flour.
~ Beat the eggs lightly, add the sugar and brandy and beat again to mix.
~ Pour in the flour well and start kneading.
~ Add the orange juice and milk and knead to a smooth soft dough.
~ Add more flour to the dough if needed.
~ Allow the dough to rest for half to an hour and knead again.
~ Use remaining flour to roll out the dough into a thin sheet.
~ Cut out the rolled out dough into strips of your choice of width.
~ The small width of strips you can tie into bows, knots or any other shape you wish.
~ The strips with a bigger width you can have them rolled up.
~ Put plenty of oil into a deep frying pan and heat up.
~ One at a time, fry you diples (Turnovers) in the oil until golden.
~ The large in width diples, using 2 forks, you roll then in the frying pan as they get cooked.
~ After you remove them from the oil, place them on kitchen paper towel to drain.
~ Place in a shallow baking pan side by side apart from each other.
~ In the meantime in another sauce pan mix the honey with the warm water mix well and keep warm.
~ There are two ways of placing the syrup on the diples (Turnovers), either you pour it over the diples or you heat the syrup and deep them in.
~ Either way is sufficient enough.
~ Sprinkle with chopped walnuts and powder cinnamon if desire.
