Chylopites me Arni (Chylopites with leg of Lamb)
~ 500 g of Chylopites
~ 500gr of leg of lamb
~ 4 ripped tomatoes peeled and chopped
~ 1 onion finely chopped
~ 2 tbsp of olive oil
~ 1 tsp of paprika
~ 1 tsp of thyme
~ 2 cops of red dry wine
~ Salt and pepper to taste
~ Grated cheese of choice (Kefalograviera)
|~ Chylopites are a kind of home made pasta like Linguini cut in small pieces, made out of Semolina Eggs and Milk.
~ Chylopites can be found at any Greek Bakery or at any supermarket carrying Greek products.
|~ Wash the leg of lamb well and cut in small cubes.
~ Place the lamb cubes in a pan with the thyme, salt and pepper to taste and fry all over for a few minutes in the hot olive oil.
~ Add the chopped onions, the wine and the chopped tomatoes and stir to mix all ingredients.
~ Let it cook for about 25- 30 minutes.
~ Add the chylopites and paprika; stir well to mix all ingredients.
~ Add some water if needed.
~ Cook for another 10-12 minutes.
~ Serve immediately with some grated cheese of choice.
