| ~ Ingredients: ~ 1 kilo of pork ribs cut in small pieces ~ 1 lb of mushrooms cut in quarters ~ 1-2 tbsp of flour ~ 1/4 cup of olive oil ~ 2 large onions chopped ~ Finely chopped parsley ~ 1 1/2 cup of red dry wine ~ Salt and pepper to taste |

| ~ Wash the pork ribs and season with salt and pepper to taste. ~ Coat pork ribs with flour. ~ Cut the onions in half, turn flat side on the board and slice. ~ Clean mushrooms and cut in quarters. ~ Heat up the oil in a pan and fry the pork ribs on all sides. ~ Add the onions and mushrooms, season to taste and fry until the onions are translucent and mushrooms are soft. ~ Add the wine, lower the heat, cover the pan and simmer for about 1 hour or until a thick sauce is formed. ~ Stir occasionally to cook ingredients well from all sides. ~ Place in a platter and garnish with chopped parsley. ~ Serve Chirino me Manitaria (Pork Ribs with Mushrooms) hot. ~ Chirino me Manitaria (Pork Ribs with Mushrooms) can be accompanied with boiled vegetables, mush potatoes or anything else you desire. ~ Good luck and bon appétit. |
