Baked Oatmeal Maffins

~ Ingredients:

~ 5 cups rolled oats
~ 2 cups of milk
~ 1/2 stick of butter
~ 2 1/2 tsp of baking powder
~ 3 eggs
~ 1/4 cup of maple syrup
~ 1/2 cup of raisins
~ 1 tbsp of powder vanilla
~ 1/2 tsp of salt  
Breakfast

Yogurt with Honey, Baked Oatmeal
and Strawberries
   

 

~ Melt the butter in a sauce pan.
~ Grease a 9"x13" baking dish or a muffin pan.
~ Beat the eggs in a bowl.
~ In a large bowl add baking powder and salt, and whisk until well mixed.
~ Add maple syrup, vanilla, melted butter, milk, and whisk until all ingredients are well mixed.
~ Add oats and raisins to the mixture.
~ Stir until everything is combined well.
~ There should be enough liquid to moisten all the oats.
~ If mixture is too thick you can add more milk if needed.
~ Let the mixture soak for at least an hour, overnight is better.
~ Pour into a baking dish or into a muffin pan (the recipe will generously fill a
regular 12 cup muffin pan, they don't puff up much, so don't worry about over filling the cups).
Bake at 350 degrees for 20-30 minutes in a muffin pan, or 35-45 minutes in a
baking dish.
