Κατσικακι Λεμονατο (Baked Goat Meat in Lemon Sauce)

~ Ingredients for 8 portions:

~ 11/2 kilo young goat meat
~ 1 mug of lemon juice
~ 1 mug of white dry wine
~ 3-5 tbsp of olive oil
~ 4 cloves of garlic
~ 3 tbsp of dry rosemary
~ 2 tbsp of oregano
~ Zest of 1/2 a lemon
~ Salt and pepper to taste  
   

 

~ Cut the goat meat in portions and put them in a deep bowl or any other utensil with cover.
~ Sprinkle with salt and pepper to taste, rosemary and oregano.
~ Add the garlic cloves, the wine, the lemon juice and the zest of the lemon.
~ Mix well and cover the utensil.
~ Place the meat in the refrigerator marinate for about 5 hours.
~ Periodically open the utensil you place the meat in and turn the meat over to other side in order to be marinated from all sides.
~ After the marinating time is done, transfer the meat with all the marinating ingredients in a baking pan.
~ Add the olive oil and 1/4 cup of water and cover the baking pan with aluminum foil.
~ Cook in a preheated oven at 350 Degrees Celsius (see conversions) for about 40-45 minutes, or until the meat is cooked well.
~ Adding the water is to prevent the marinating juices from evaporating and leave the food with a perfectly nice sauce.
~ If you prefer, you can add some potatoes with the meat to cook at the same time.
~ Remove from the oven and serve immediately in portions and accompany with vegetables of your likings, steamed or boiled and a glass of good Greek wine.
~ The goat meat has a distinctive intense smell and for this reason before you cook it, it would be a good idea to be marinated first with various aromatic spices, lemon, wine etc.
