Bacaliaros Skorthalia (Dried Cod with Garlic Sauce)

~ Ingredients:
 
~ 1 kilo of Bacaliaro (Dried Cod)
~ 1 medium onion cut in two
~ 2 carrots cut in half
~ 2 stacks of celery cut in half
~ Olive oil
~ Lemon wedges
~ Fine chopped parsley
Bacala in garlic and olive oil
~ Ingredients for Skorthalia:
 
~ 6-8 cloves of garlic
~ 2 cups of mash potatoes
~ Olive oil
~ White vinegar
~ Fine chopped parsley
~ Salt and pepper
Mashed Potatoes
   

 

~ Cut your Bacaliaro in big pieces and remove the skin.
~ Place it in a large bowl with plenty of water to cover it.
~ Leave it in the water overnight, changing the water 2-3 times.
~ Remove from water place in a pot with the onion, carrots and celery and cook for about an hour.
~ Place in a platter, debone and cut in smaller pieces.
~ Pour some olive oil on top and garnish with some fine chopped parsley and lemon wedges.
~ Now we will prepare the Skorthalia.
~ Pound or grade the garlic and mix it well with your already made mash potatoes.
~ Alternately add oil and vinegar until it becomes smooth, creamy and to your taste.
~ Add salt and pepper to taste and mix well.
~ Place in a bowl or plate and garnish with chopped parsley and Kalamata black Olives.
~ You can serve Bacaliaro (Dried Cod) hot or cold with the Skorthalia sauce.
